Q: I need some new ideas for healthy snacks. Do you know of any that might be good other than just fruit or granola bars?

A: That’s a good question because some people get bored eating the same things and that’s when items you wouldn’t normally select become more enticing.

In the New York Times best-seller “Run Fast, Eat Slow,” by Shalene Flanagan and Elyse Kopecky, they share a multitude of healthy foods and snacks you can make including “Superhero Muffins.” Shalene Flanagan ran cross country for the University of North Carolina at Chapel Hill (UNC-CH) and is a world class marathon runner and was in the 2016 Rio Olympics. Elyse Kopecky also ran cross country at UNC-CH and later went to culinary school.

This book is filled with recipes for foods for athletes who require highly nutritional, performance foods. The problem for most people is the time required for cooking plus it seems for a lot of people, cooking is simply viewed as a chore.

A delicious, well-cooked meal that fills the house with an appetizing aroma seems to be a lost art except for holidays. Cooking and creating a meal together can be good family time and the reward is the food.

Here's the recipe:

Superhero muffins

• 2 cups almond meal

• 1 cup old-fashioned oats

• 2 teaspoons ground cinnamon

• 1/2 teaspoon nutmeg

• 1 teaspoon baking soda

• 1/2 teaspoon seas salt

• 1/2 cup chopped walnuts (optional)

• 1/2 cup raisins (optional)

• 3 eggs, beaten

• 1 cup grated zucchini

• 1 cup grated carrots

• 6 tablespoons unsalted butter, melted

• 1/2 cup dark amber maple syrup

• 1 teaspoon vanilla extract

Mix all the dry ingredients in a bowl. In a separate bowl mix the eggs, zucchini, carrots, butter, maple syrup and vanilla extract. Add the dry ingredients and spoon the thick batter into a muffin pan with paper muffin cups. Bake at 350 degrees F. for 25 to 35 minutes or until a toothpick inserted into the center of a muffin comes out clean. Enjoy.
